Eggs & Cauliflower Hash

I am addicted to Cauliflower Rice. Most grocery stores have a version already “riced” for you, my favorite is Trader Joes, the frozen version because then I don’t have to worry about when I use it. That said there are many websites that will show you how to make your own if you Google “Cauliflower Rice.”

Using my usual formula of what I have and what needs to be used, this hash had leftover crab in it. You can use leftover chicken, ground beef, ground turkey, add a cut up chicken apple sausage, or skip the meat altogether.


I put some MCT Oil in a pan (any oil or butter works), and then dump the entire bag of Cauliflower Rice in the pan.


Let it get hot and broken up, add salt and pepper.

Next sprinkle in some Nutritional Yeast (I love Braggs which adds a cheesy flavor & texture) and some Turmeric! Turmeric is so good for you as it is a natural anti-inflammatory (read more about Turmeric), but really does not add any flavor to your foods, just color. I like it because it makes the rice look more like “hash”.


Next I flatten it across the pan with a spatchula and turn the heat up to high for 30 seconds to a minute, to really crisp it up.

Then put in any additions (already cooked, talking leftovers-unless adding fresh vegetables, those can be raw), and mix until everything is warm.


I cooked the eggs in a separate pan, on low so they don’t need too much attention.


Add the egg to the top, and then sprinkle with herbs, a cheese like feta, or if that is too fancy use ketchup! We added some hot sauce to ours?

About 10 minutes time total.



Paleo Freezer Waffles

OK, in general I am not a recipe person. I will talk a lot about that as I post on Happy Body Food, but it just seems complicated to me to have to work that hard to get healthy food on the table (work: find recipe, check ingredients, go to the store, time everything just right-oh, and follow directions. I am bad at that in general, ask Mr. Happy Body Food!).

That said this recipe changed our lives. Stacy at Paleo Parents is a genius as far as I am concerned! Finding breakfast foods that are not processed, not filled with sugar, contain fiber, protein, & healthy fats for our kids to eat so they can go to school and actually focus, is challenging. Especially when one of your kids refuses to eat eggs!!!

Then I stumbled onto this. HELLO! Everyone likes them, even friends who spend the night and that NEVER happens!

You will need a waffle maker, I like my Cuisinart...sturdy, consistent, and cleans up well. And a food processor OR use your Vitamix for a one container do-all!!! Works perfectly!


Frozen Waffles

(These don’t always make it to the freezer, but when they do they go right in the toaster.)


  • 1 medium banana (use green-tipped for 21 Day Sugar Detox*, or ripe for more flavor)
  • 1 medium apple, peeled and cored (use green for 21 Day Sugar Detox*, or your favorite variety)
  • 1 C smooth almond butter (or a grainy-brand of sunflower seed butter for nut-free)
  • 2 medium eggs
  • 1 TBSP arrowroot powder (I’ll be honest, I have never used this)
  • 1 TBSP vanilla extract
  • 1/2 tsp baking soda
  • oil for greasing waffle iron (melted coconut oil with a silicon pastry brush works best)


  1. Puree apple and banana in a food processor. (I use the Vitamix)
  2. Use the whisk attachment on your electric mixer and whip almond butter on high for 2-3 minutes until smooth and fluffed. (more work, use the Vitamix)
  3. Add puree and remaining ingredients to whipped almond butter and continue to whip until combined. (ALL of it into the Vitamix!!!!)
  4. Grease your hot waffle maker (for each waffle you make).
  5. Use about 1 ladle of batter per 8-by-4-inch waffle onto hot waffle iron for 3-5 minutes until browned. Do not fill up entire waffle maker, leave about 40% unfilled so that the batter can spread. If your waffle is soft or floppy, it’s not ready yet – keep cooking for another minute or two!
  6. Eat immediately or store flat in freezer and make your own breakfast by reheating in toaster – the waffles will be firm enough!
  7. Then freeze the rest for later!
